Hi! I’m Phoebe. I'm currently pursuing wine studies and considering expanding my career path to integrate the world of wine. I had recently completed a semester of study in Wines at George Brown College and I'm looking for opportunities to learn more about wine, the making of wine, and to get hands-on experience in a winery or on a vineyard. I'm planning to continue studies in Wine and plan to pursue the WSET diploma. In addition to enjoying wine as an immersive experience, I'm interested in the historical, cultural, technical and geographical aspects of wine and winemaking. Biodynamic and sustainable practices are highly interesting to me. I'm also an advocate for diversity and representation and I'm interested in learning in spaces where there is room for women and women of color to grow.

Experience
With over 12 years in startup and corporate roles, I have cultivated a versatile skill set from the worlds of VR and AR tech, luxury retail, consulting, corporate communications and more. My primary strengths revolve around leading communications and marketing strategies via content creation and crafting high quality content and innovative and immersive experiences.

My name is Rallings, and I am passionate about wine and how wine brings different cultures together. I started my wine journey about a decade ago in the Cape Winelands where I worked as Cellar Hand at Springfontein Wine Estate in Walkerbay, RSA. 2018 I joined Cunard cruise line as Sommelier the position I held until Covid pandemic. After Covid I was hired as Speciality Restaurent Sommelier for MSC cruises. I supervised wine service operations in 5 different restaurants, managing beverage inventory and supervising wine service. July 2022 I relocated to Western Canada and currently I serve as a Sales Representative for Northern Alberta at Enotri Wine Marketing.
In addition to my practical experience, I studied Diploma in Wine from the Cape Wine Academy.
I am eager to pursue an international wine programme to further enhance my wine of the world knowledge. Look for grammar and spelling mistake

I truly enjoy immersing myself in new cultures and trying new cuisines. These days, I am starting an online publication regarding food, wine and lifestyle. I think access to these resources would help me attain the knowledge I need to equip me and my audience.

I have been a part of the hospitality industry since 2019. I have worked at restaurants like Alo, PAi, and Clio. I have worked in many capacities, progressively in the industry first as a polisher, then a food runner and service assistant, and finally a server.

I left the hospitality industry in 2022 and worked in the Federal Government

I recently left my job (2024) and I am looking to get back into the hospitality industry in Toronto.

I received my Honours Bachelor of Science (HBSc) in Psychology and Biology from the University of Toronto in 2022
